I know it’s Taco Tuesday, but pancakes are acceptable every day of the week, right? ; )
This recipe is an oldie but a goodie, so I thought I would give it a little time in the spotlight for those of you who have never made it before!
I absolutely love breakfast food at all times of the day. I think it is especially good at dinner time. Anyone else out there a huge breakfast for dinner fan, or is that just me? I grew up in a house where we had breakfast for dinner on a regular basis, so I am all about it.

Pancakes are definitely one of my favorite breakfast foods, but I don’t make them near enough! I whipped up this recipe a few weekends ago and it was a perfect lazy Sunday breakfast. When you have a little extra time on your hands to make a fancy breakfast feast, the reward is so worth it. Better yet, these babies heat up really well in the microwave, so if you cook the whole batch at once, store the leftovers in an airtight Tupperware container in the refrigerator and you can have pancakes for the next several mornings using minimal effort! Can you think of anything better? Honestly, I can’t. Except maybe my Whole Wheat Banana Bread all week long.
I know a lot of people skip breakfast simply because they don’t have time, so this is a great way to beat that lame excuse. ; ) If the goods are already made up for you, there is no reason why breakfast skipping should be a thing. We all know breakfast is so important! All you have to do is add some delicious toppings and you have a nourishing meal in your belly to start the day off in the best way.
Some of you might think that you can never eat pancakes because they have too many carbs and all that nonsense. Well, I’m here to tell you that: a) you can absolutely eat pancakes, b) your body loves and needs carbs for fuel, and c) you just need these pancakes in your life. Okay? These flourless pancakes contain healthy carbs in the form of whole-grain oats and bananas, and they have a good dose of protein thanks to protein powder (which can be whey or soy depending on your personal preference), eggs, Greek yogurt and collagen peptides. I like to finish mine off with some nutritious toppings, such as mixed berries, banana slices, almond or peanut butter, walnuts, tahini — the list goes on! You can totally make these pancakes your own and get creative with the toppings!
