- 1 3.4 oz package instant vanilla pudding mix
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon more for garnish
- 1/2 tsp salt
- 1 can pumpkin puree
- 2 Tbsp 100% pure maple syrup
- 1/2 tsp pure vanilla extract
- 1 cup whole milk
- 1 container whipped cream or heavy whipping cream
- 8 honey graham crackers crushed
- 1/2 cup chopped pecans
In a large bowl, whisk together pudding mix, spices, and salt. Add pumpkin, maple syrup, vanilla, and whole milk and beat with a hand mixer or large spoon until smooth.
Assemble your individual pumpkin trifles by doing the following layers:-1/2 of a graham cracker, crushed + 1 Tbsp chopped pecans-1/4 cup pumpkin mousse mixture-1/4 cup whipped cream(If doing this in a medium to large bowl, double the layers: 1 whole crushed graham cracker + 2 Tbsp chopped pecans, 1/2 cup pumpkin mousse, 1/2 cup whipped cream) Repeat layers one more time. Top with 1-2 Tbsp chopped pecans and sprinkle of cinnamon.
Keep refrigerated until serving. Cover with Press & Seal and store in fridge for up to 3 days.
