Ingredients

  • 1 3.4 oz package instant vanilla pudding mix
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon more for garnish
  • 1/2 tsp salt
  • 1 can pumpkin puree
  • 2 Tbsp 100% pure maple syrup
  • 1/2 tsp pure vanilla extract
  • 1 cup whole milk
  • 1 container whipped cream or heavy whipping cream
  • 8 honey graham crackers crushed
  • 1/2 cup chopped pecans

Instructions

  • In a large bowl, whisk together pudding mix, spices, and salt. Add pumpkin, maple syrup, vanilla, and whole milk and beat with a hand mixer or large spoon until smooth.
  • Assemble your individual pumpkin trifles by doing the following layers:
    -1/2 of a graham cracker, crushed + 1 Tbsp chopped pecans
    -1/4 cup pumpkin mousse mixture
    -1/4 cup whipped cream
    (If doing this in a medium to large bowl, double the layers: 1 whole crushed graham cracker + 2 Tbsp chopped pecans, 1/2 cup pumpkin mousse, 1/2 cup whipped cream)
  • Repeat layers one more time. Top with 1-2 Tbsp chopped pecans and sprinkle of cinnamon.
  • Keep refrigerated until serving. Cover with Press & Seal and store in fridge for up to 3 days.
