Healthy Berry Crisp

Ingredients

For The Oat Crumble Topping

  • 1/2 cup Kodiak Cakes blueberry muffin mix
  • 1/3 cup old-fashioned oats
  • 3/4 cup pecans chopped
  • 2 Tbsp butter or ghee, melted

For The Berry Filling

  • 4 cups berries fresh or frozen (I used frozen mixed berries)
  • 2 Tbsp ghee or butter
  • 2 Tbsp Kodiak Cakes blueberry muffin mix heaping
  • 2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 Tbsp maple syrup or honey
  • 1/4 cup water

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. 
  • Combine all ingredients for the oat crumble topping in a small bowl: Kodiak Cakes mix, old-fashioned oats, chopped pecans and melted butter. Stir until all ingredients are mixed well, then set aside.
  • Spray a medium-large skillet with non-stick cooking spray, and add fresh or frozen berries to the pan. Cook over medium heat and stir for a few minutes. Add 2 Tbsp of ghee or melted butter, 2 heaping Tbsp of Kodiak Cakes protein-packed blueberry muffin mix and mix in using a spatula or wooden spoon. 
  • Next, add cinnamon, vanilla extract, a dash of salt and maple syrup. Continue to cook for about 5 minutes on low heat, stirring often.
  • Add 1/4 cup water, stir to incorporate and simmer for about 5 minutes, or until sauce starts to thicken. 
  • When ready, transfer the berry & sauce mixture to an oven-safe pie dish sprayed with non-stick cooking spray. (Or an 8x8 baking dish)
  • Evenly sprinkle the oat crumble topping over the top of the berry mixture using a spoon.
  • Transfer the pie pan to the preheated oven and bake for 25-30 minutes at 350 degrees F or until the top is golden brown and the fruit is bubbly. 
  • Remove from oven and serve warm by itself, or alongside vanilla ice cream, or Greek yogurt for a higher protein option. A serving is roughly 1/2 cup of the berry crisp. 
  • Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat individual servings in the microwave.
