  • 2 Tbsp Friendly Farms Unsweetened Original Almondmilk
  • Salt & pepper to taste
  • 2 cups Simply Nature Organic Baby Spinach
  • 1/2 cup bell peppers chopped
  • 1/2 cup onions (red or yellow), chopped
  • 1/2 cup Simply Nature Organic Black Beans drained and rinsed

Instructions

  • In a medium bowl, combine eggs and unsweetened original Almondmilk and beat well. Season with salt and pepper, to taste.
  • Spray a large skillet pan with non-stick cooking spray. Over medium heat, add bell peppers and onions; cook for 2-3 minutes, stirring occasionally, until softened. Next, add baby spinach, and cook until wilted down. Next, add black beans and cook for another minute.
  • Add eggs to the veggie mixture and scramble. Use a spatula to stir occasionally, until eggs are cooked throughout.

  • Fold tortilla over on both ends and then roll up to seal. Serve immediately with desired toppings, such as salsa, sliced avocado, etc.

Notes

Serving size is one burrito. This recipe will make approximately 4-5 servings depending on how full you want your burritos to be!
Leftover Instructions: If you plan to eat them within the next 2-3 days, simply store in an airtight container in the refrigerator, and reheat individually for 1-2 minutes in the microwave.
Freezer Instructions: Place burritos seam side down onto a piece of plastic wrap. Roll up into the plastic wrap, and then wrap again inside a piece of foil. Transfer to a sealable freezer bag and store. Remove from plastic wrap + foil to reheat and heat in the microwave 2-3 minutes, flipping halfway through. Add desired toppings to serve.
