Avocado Egg Breakfast Sandwich

Ingredients

  • 1 whole grain English muffin
  • Avocado oil spray
  • 1 cup baby spinach
  • 2 eggs
  • 1/3 avocado or 1/2 mini avocado
  • 1/2 Tbsp plain whipped cream cheese
  • 1 tsp everything bagel seasoning
  • 2 Tbsp shredded cheese Mexican or mozzarella
  • Salt and pepper to taste

Instructions

  • First, spray a small skillet with avocado oil spray, add baby spinach and cook over medium heat, stirring occasionally with a spatula until wilted down.
  • Next, crack two eggs straight into the pan. Use your spatula to break the yolks, and stir, mixing up the egg yolks, whites and spinach. Add fresh cracked pepper, to taste.
  • Once everything has been combined well, let sit for 30 seconds or so to cook on one side, then flip, and let sit on the other side until cooked through. Ideally you want it to be like an omelet vs. scrambled eggs so it is easy to stack on the English muffin. Flip again as needed.
  • Toast English muffin and spread plain whipped cream cheese on one half, avocado on the other half, and sprinkle everything bagel seasoning on both.
  • Add cooked eggs on top of the English muffin, top with shredded cheese if desired, smash them together, and enjoy!
