Pumpkin Butter Stuffed Dates

Ingredients

  • 1/2 cup plain whipped cream cheese
  • 1/4 cup pumpkin puree
  • 2 tbsp creamy nut butter peanut butter or almond butter
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1.5 Tbsp pure maple syrup
  • 12 pitted medjool dates
  • Fresh cracked sea salt to taste
  • 1/4 cup dark chocolate chips

Instructions

  • In a small bowl, combine your whipped cream cheese, pumpkin, nut butter, cinnamon, vanilla extract and pure maple syrup, and mix well to combine.
  • Use your fingers to gently open up the pitted dates (if they have a slit down the side; if not, use a knife to cut open one side and open them face up). Spread ~1/2 Tbsp of the filling on top of each date, sprinkle with freshly cracked sea salt, and add a few dark chocolate chips.
  • Enjoy immediately, or store any leftovers in the refrigerator for 3-4 days.

Notes

One serving is two pumpkin butter stuffed dates.
