You know what I really love about this blog? The fact that it’s all mine. I can do whatever I want with it. There are no rules. Sure, it’s called Wellness For The Win, but does it always have to be about food & exercise? I asked the boss, and she said, “Nope”. Don’t get me wrong — those things are my passion and I love sharing them with you all too, but what I have learned about myself since I started this blog is that I really love to tell stories. True stories about things that happen in real life. And I like to think I’ve gotten pretty good at that. The story of my engagement got the most views of any of my blog posts ever! And it was completely unrelated to health/wellness – HA. But that’s okay. I’m so happy I was able to share that incredible experience with you. I’m much better at telling stories in writing than I am at saying them out loud. The voice in my head sounds a lot better sometimes… My mom would tell me that’s a blonde thing. ; )

But in all seriousness, what I love about this blog is having a place to put my thoughts into words and letting people read them and react to them and feel them and possibly even change because of them — hopefully for the better. And, of course, provide healthy ideas that you can all try to incorporate into your diets and daily lives. My goal is to make living a healthy life look easy, fun, and delicious. Because I truly love this lifestyle and believe that anyone can achieve it with just a little bit of effort.

I just love to write. I love sharing & expressing myself this way. Anyone who knows me can tell you I’m a pretty open book. I’m outgoing, I can be loud, and I’m not afraid to say what’s on my mind. Sometimes that might be a bad thing, but I kinda like that about myself. The world needs more honest people, don’t you think? I curse like a sailor in real life, but I try to keep it pretty PG here. I always say I’m trying to clean up my language in “real life” too, but that’s not entirely true. I say real life — as opposed to fake life? This blog is very real to me. And amazingly enough, it’s real to a lot of you too. I’m always so surprised at how many people I run into that mention they read my blog. That’s so exciting for me. At the same time, it’s a lot of pressure. Right? I mean, shoot, you guys. I haven’t had time to post lately. I’ve been busy going on trips and getting engaged and now wedding planning and working and living and eating and posting TONS of pics of my daily eats on Instagram, but taking the time to sit down and really write a blog post? And share a new recipe I’ve tried? Well, it just hasn’t happened. If I’m being honest, like I always try to be, I am laying in bed at 11:38 pm writing this up on my phone. That’s how most of my blogs happen.

Where was I going with this? Honestly, I’m not sure. My point is, I love to tell stories & share life with all of you. And I appreciate you taking the time to read it. I apologize if I slack on it every once in a while. If there is ever anything specific you’d like me to write about, please tell me! I just think a lot of us go through similar ups & downs, but not everyone knows how to handle some of those high & low points. And not everyone wants to admit they are going through those things. I want to be candid about my struggles as well as my exciting times in life (like right now) in the hopes that you can relate and get something out of what I’m saying here.

My final random thought/statement for the day: I really think that someday I want to be a writer of some sort. Maybe for a health magazine? Hell, maybe I’ll write a book. It’s a little scary to put our hopes and dreams out there for the world to see, because then it holds us accountable. Then people expect us to do something about it, right? Like if you make a Facebook status about how you want to lose 50 pounds, but the next day you post a big fat piece of cake you had as a snack at work, people are like “What the?” So yeah, don’t expect to see me in any magazines or with a New York Times Best Seller anytime soon. But maybe someday. Just maybe…

Recipe time!!!! It seems to me that everyone is always searching for new, easy and healthy lunch & dinner ideas, including myself. Yes, I know the last recipe I posted was pizza too….. Sue me. Everyone loves pizza and that is a fact. But this one is completely different — it’s FLATBREAD, people. And the veggie combo I used here is just the bomb and I highly recommend you try it for yourselves, like now. Also, the color combo looks like Christmas and I wanted to give it a fun name so there ya have it. Enjoy!

Christmas Veggie Flatbread

Ingredients

  • 1 multigrain Flatout with flax
  • 2 tbsp of light Prego sauce
  • 1/2 cup part skim mozzarella cheese
  • 1/3 cup chopped green bell peppers
  • 1/3 cup diced tomatoes
  • 1/2 cup roasted cauliflower florets (optional — I just happened to have them & it was a delicious addition)
  • 1-2 oz shredded rotisserie chicken
  • Italian seasoning to taste
  • Crushed red peppers if desired

Instructions:
1. Turn oven on to broil or 450 F.

2. Place Flatout on a baking sheet and put in oven for 2 minutes if you want to make it a little crispy first. I skipped this step but it was still delish.

3. Remove from oven. Spread ~2 heaping tbsp of light Prego sauce on Flatout — enough to cover it in a thin layer.

4. Add half the mozzarella cheese (~1/4 cup).

5. Arrange the veggies & chicken so that the ingredients are evenly distributed. Top with the remaining 1/4 cup of cheese.

6. Sprinkle flatbread with Italian seasoning. (I probably used about 1/8-1/4 tsp total)

7. Place pizza in oven for ~5 minutes, until cheese is melted.

8. Enjoy!!! Add crushed red peppers for some additional spice if desired.

Eat this flatbread with a yummy side salad or lots of veggies!! I had mine with more roasted cauliflower, roasted carrot “fries” and roasted sweet potato rounds.

    And just so you know, I LOVE your blog! I get as excited when I see you have a new post as I get when my Graze snacks arrive! :o) I don’t know if I can explain this well, but for someone who had been in Weight Watchers most of their lives, it’s just really nice to hear someone who is fit and fabulous speaking from a viewpoint of “here’s how I stay really healthy and fit” instead of “here’s how to lose weight because we are fat and have to lose weight.” Does that make sense? Anyway, thank you for sharing your tips, insights and wisdom! Know that you are appreciated!!
