This meal feels way too easy to really call a “recipe”, but nonetheless, my obsession with this Avocado Egg Breakfast Sandwich is real, so I thought it deserved a permanent spot on the blog. I want to create and share more savory breakfast recipes, so figured I’d start with something super simple and satisfying!

how to make avocado egg breakfast sandwich + tips

First, spray a small pan with avocado oil spray, add baby spinach and cook over medium heat, stirring occasionally with a spatula until wilted down.

Next, crack two eggs straight into the pan. Use your spatula to break the yolks, and stir, mixing up the yolks, whites and spinach. Once everything has been combined, let sit for 30 seconds or so to cook on one side, then flip, and let sit on the other side until cooked through. Ideally you want it to be like an omelet vs. scrambled eggs so it is easy to stack on the English muffin.

Toast English muffin and spread plain whipped cream cheese on one half, avocado on the other half, and sprinkle everything bagel seasoning on both.

Add cooked eggs on top of the English muffin, top with shredded cheese if desired, smash them together, and enjoy!

Ingredients
  

  • 1 whole grain English muffin
  • Avocado oil spray
  • 1 cup baby spinach
  • 2 eggs
  • 1/3 avocado or 1/2 mini avocado
  • 1/2 Tbsp plain whipped cream cheese
  • 1 tsp everything bagel seasoning
  • 2 Tbsp shredded cheese Mexican or mozzarella
  • Salt and pepper to taste

    Hey! I tried out your recipe today and it was good! and easy to make. I think I’ll add more salt and melt the cheese on the egg while it’s on the stove. But other than that it was tasty.
