Pumpkin Butter Stuffed Dates

I remember early in the pandemic I started seeing people all over IG eating peanut butter stuffed dates and it sounded delicious. I also happened to be pregnant at the time, and there are all those old wives tales about how eating dates during pregnancy can help with labor. Toward the end of my pregnancy, I was willing to try anything, but I also happen to love dates as a snack, so I capitalized! With fall around the corner, I decided to put a festive spin on this tasty treat with these Pumpkin Butter Stuffed Dates. I hope you enjoy!

  • Whipped cream cheese
  • Pumpkin puree
  • Creamy nut butter — peanut butter OR almond butter, your choice!
  • Cinnamon
  • Vanilla extract
  • Pure maple syrup
  • Pitted dates
  • Sea salt
  • Dark chocolate chips

HOW TO MAKE PUMPKIN BUTTER STUFFED DATES

This recipe couldn’t be easier to make, and it takes literally 5 minutes to throw together. You can also make a bunch all at once and store any leftovers in the fridge in an airtight container for several days, so you can easily just pop a chilled one in your mouth anytime you want a sweet treat!

In a small bowl, combine your whipped cream cheese, pumpkin, nut butter, cinnamon, vanilla extract and pure maple syrup, and mix well to combine.

Use your fingers to gently open up the pitted dates (if they have a slit down the side; if not, use a knife to cut open one side and open them face up). Spread ~1/2 Tbsp of the filling on top of each date, sprinkle with freshly cracked sea salt, and add a few dark chocolate chips.

Enjoy immediately, or store any leftovers in the refrigerator! You can also use any leftovers of the pumpkin butter in a variety of ways. It would be amazing on a whole grain English muffin or bagel, and it also tastes yummy on crackers or pretzels!

Ingredients
  

  • 1/2 cup plain whipped cream cheese
  • 1/4 cup pumpkin puree
  • 2 tbsp creamy nut butter peanut butter or almond butter
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1.5 Tbsp pure maple syrup
  • 12 pitted medjool dates
  • Fresh cracked sea salt to taste
  • 1/4 cup dark chocolate chips

Instructions
 

  • In a small bowl, combine your whipped cream cheese, pumpkin, nut butter, cinnamon, vanilla extract and pure maple syrup, and mix well to combine.
