Chicken Stir-Fry with Rice and Peanut Sauce

This Chicken Stir-Fry with Rice and Peanut Sauce is SO delicious, easy to make, and makes great leftovers for work lunches! It’s also meal-prep friendly, because there are several steps you can do in advance to save yourself time on busy weeknights! Last, but definitely not least, you can find all the ingredients to make it at my favorite place — ALDI!

You all know my love for ALDI runs deep. In case you haven’t heard all the reasons I love ALDI so much, let me remind you here.

First and foremost, I can’t get over the affordability. Life is expensive, so why spend more on groceries than you have to? ALDI has saved our family so much money over the years and that is what got me hooked in the first place. I get way more bang for my buck at ALDI than I do anywhere else, and I don’t even have to sacrifice quality.

Which brings me to my next point — quality. I am always so impressed by the quality and variety of products that I can find at ALDI. They are constantly stepping up their game, offering even more products, and I love to see what new items are coming out, especially the seasonal goodies! Everything from their beautiful, colorful produce section, to their meat selection, healthy snacks, gluten-free products and everything in between. They truly have something for everyone!

Another thing I love about ALDI is the convenience. I personally have several ALDI stores close to me (thank goodness), and I love heading into the store pretty regularly so I can peruse the ALDI Finds aisle and get the full experience, BUT sometimes life is really busy. That’s where their curbside pickup services come in.

Did you know you can order groceries online through the ALDI website and either do curbside pickup OR delivery? This is something I also utilize often, especially on those busy weeks when I don’t have the time (or energy) to make it into the store. Truly a lifesaver for anyone with a busy schedule or just someone who likes to plan ahead!

Here’s what you need to bring this delicious recipe to life!

  • Simply Nature Organic Chicken Breasts 
  • Simply Nature 100% Avocado Oil
  • Stonemill Minced Garlic in Extra Virgin Olive Oil
  • Southern Grove Dry Roasted Peanuts – regular or honey roasted
  • Carrots
  • Bell peppers
  • Green onions
  • Broccoli
  • Yellow onions
  • Salt and pepper
  • Stonemill Garlic Powder
  • Burman’s Orange Stir Fry Sauce
  • Burman’s Reduced Sodium Soy Sauce
  • Simply Nature Organic Creamy Peanut Butter
  • Stonemill Crushed Red Pepper 
  • Simply Nature Organic 90-Second Quinoa & Brown Rice Pouch 
  • OR Season’s Choice Riced Cauliflower

how to make chicken stir-fry with rice and peanut sauce: instructions

Preheat oven to 400 degrees Fahrenheit.

Line a large baking sheet with parchment paper and spray with nonstick cooking spray. Set aside.

Wash and chop all produce. Chop carrots into thin slices/coins. Slice bell peppers into thin, 2″ strips. Thinly slice onion. Chop broccoli into small florets.

Combine all chopped veggies in a large bowl, and toss with 2 Tbsp avocado oil, salt, pepper and garlic powder. Toss to coat and season evenly. Transfer seasoned veggies to prepared baking sheet.

Once oven is preheated, place veggies in oven and set timer for 15 minutes. (Vegetables will roast for 30 minutes total. Use a spatula to toss them at the 15 minute mark, then put another 15 minutes on the timer. This helps them cook evenly.)

Once veggies are in the oven, prepare orange peanut sauce. In a small bowl, combine creamy peanut butter, soy sauce, orange stir fry sauce, minced garlic, crushed red peppers, and a splash of water (or enough to make sauce thin and drizzly). Set aside.

Cut chicken breasts into bite-sized pieces and add to a medium-sized bowl. Pour 1/4 cup of the prepared sauce over the chicken and stir to coat well.

Place a large skillet over medium heat and add a drizzle of avocado oil and 1/2 Tbsp minced garlic. Stir and cook for 1-2 minutes. Next, add chicken and cook for 5-7 minutes, stirring regularly, until chicken is cooked through (or has reached internal temperature of 165 degrees Fahrenheit).

Once chicken is cooked, reduce heat to low and let simmer until veggies are done cooking. Once vegetables are finished, add them to the skillet with the chicken, along with 2 Tbsp of sauce and 1/2 cup of dry roasted peanuts, and stir well, cooking for a few more minutes. Top with green onions.

Cook Simply Nature Organic 90-Second Quinoa & Brown Rice pouch in the microwave according to package instructions.

Serve immediately. Recipe makes 4-6 servings. (There should be a small amount of sauce remaining for serving, or you can make a double batch of sauce if you’d like more for dipping or topping your dish.)

Store leftovers in an airtight container in the refrigerator for 3-4 days.

what to do if there is a peanut allergy in your family

I would hate for anyone to miss out on this recipe due to a peanut allergy, so I wanted to provide some substitutions you can make if you still want to give it a try!

  • Simply swap out the peanut butter and use Simply Nature Organic Almond Butter instead
  • Skip the dry-roasted peanuts, and sprinkle some slivered almonds on top for crunch

Ingredients
  

For The Chicken:
